Corn in a Cup Recipe

This is not much of a recipe actually but I posted it anyhow. Corn in a cup or cup corn is very popular around the world. This is a quick and simple snack and very easy to make. If you do not want to use tinned corn, recipe with fresh corn is also given below.
Recipe of corn in a cup/cup corn
1 cup tinned corn kernels
1/4 tsp red chilli powder
1/2 tsp salt
2 tbsp butter
1/2 tsp chaat masala
2 tsp lemon juice
How to make corn in a cup
1. Heat a kadhai or a pan and melt butter in it.
2. Add corn, red chilli powder, salt and chaat masala. Stir for 2 minutes.
3. Turn off the heat and mix in lemon juice.
4. Serve hot cup corn in plastic cups or bowls.

How to make cup corn with fresh corn
Boil fresh corn with little sugar and turmeric powder for 5 minutes. Do not add salt while boiling as it will harden corn. Turn off the heat and add salt. Let corn stand in salted water for 10 minutes. Strain and prepare corn cups as above.

Aloo chana salad (Potato- chickpea salad)

Aloo chana salad is a very healthy salad as no oil or dressing is used in this recipe.
Chana or chickpeas are also known as garbanzo beans in Spanish and kichererbse in Germany. They belong to legume family and are healthful. They contain high amounts of protein. Half cup of chickpeas contain 140 calories, 5 grams of fiber, 6 grams of protein, slightly more than 1 gram of fat, Iron and Potassium. Canned chickpeas can be full of sodium so it's better to rinse them before consuming. You can also use black chickpeas for this salad.
        Recipe of aloo chana salad
            1 cup kabuli chana (chickpeas)
            2 aloo (potatoes) - peeled and cubed
            2 small onions- chopped
            2 small tomatoes- chopped
            2 tsp lemon juice
            1 tsp chaat masala
            Salt to taste
            3 green chillies- chopped

1. Soak chana overnight. Drain and boil with aloo, salt and water in a pressure cooker.

2. Strain the remaining liquid. You can use this liquid for some other dish.

3. Add the remaining ingredients to chana and toss.

4. Serve warm or refrigerate and serve aloo chana salad cold.

Simple Potato Salad

My husband always looks out for some potato dish in the dinner. So on those lazy days when I am not in the mood to cook elaborate meals, I prepare potato salad to satisfy his craving for aloo. In fact I learnt this recipe from hubby dear himself. It's a healthy salad as I have used lemon juice instead of mayonnaise as suggested in other recipes. No doubt mayo makes the salad richer and creamier but it also adds to the waist line so for all of you health buffs, this is a healthier version of potato salad.
Recipe of potato salad
3 medium potatoes- boiled, peeled and cubed
1 large onion- chopped
1 large tomato- chopped
2-3 green chillies- chopped
1 tablespoon lemon juice
Black salt to taste
1/4 tsp black pepper powder
1. Mix all the above ingredients and toss. Serve potato salad hot or cold.

You can also use 4-5 freshly ground black pepper corns in place of black pepper powder and can replace black salt with ordinary white salt.

Sprouts salad

In India, sprouts salad is also a chaat and street food item. Street vendors sell it as a spicy chaat. Salad or chaat words shouldn't  deter you from eating it as a breakfast item. In fact sprouts provide you enough energy to tackle your day if you take it as a breakfast.

1 cup sprouted moong dal (green gram)
1 cup sprouted moth dal
1 potato- boiled, peeled and cubed
1 tomato- chopped
1 onion- chopped
1 cucumber- chopped
2-3 green chilies- chopped
Salt to taste
Juice of 1 lemon
½ tsp black pepper powder

  1. Place sprouted dals with enough water in a pressure cooker. Let 2 whistles come. When pressure drops, open the lid of cooker and take out sprouts. Make sure you put just enough water in the cooker so that all water gets absorbed.

  1. Add all the above ingredients and mix. Serve sprouts salad hot or cold.

You can also add chopped vegetables like radish, carrot to this salad to make it more nutritious.
How to make sprouts
To make sprouts, soak the dal (here, moong dal and moth dal) overnight. Next day, drain. Wet a cotton cloth and squeeze it, place soaked dal on this cloth and tie the ends. Hang this (potli) somewhere and sprinkle water on it when it is dry. Take out sprouts when you see small tails of sprouts coming out of the cloth.

Healthy Bytes- sprouts provide a healthy and cheap alternative to meat proteins. Sprouts are rich in proteins, vitamins, minerals and enzymes. During the process of sprouting, proteins and vitamins increase manifold whereas calories and carbohydrates decrease.

Potato, Apple and Celery Salad

This cool salad of potato, apple and celery is very refreshing. It tastes best when chilled.
Recipe of potato, apple and celery salad
7-8 baby potatoes - peeled
2 red apples
2-3 celery stalks
1 tbsp oil
2 tsp lemon juice
1/2 cup mayonnaise
Salt to taste
Black pepper (coarsely crushed) - to taste
1. Place 4 cups of water in a pan with 1 1/2 tsp salt and baby potatoes. Bring it to a boil. Lower heat and cook covered till potatoes turn fork tender. Strain.
2. Core apples and cut into 1/2 inch cubes without peeling. Chop the celery stems.
3. Place potatoes, apples and celery stems in a mixing bowl. Add 1/2 tbsp oil and lemon juice.
4. Add salt and pepper and mix well. Cover and chill in the fridge for 1 hour.
5. Just before serving, add the mayonnaise and 1/2 tbsp oil. Gently mix and serve chilled.
Note- Cut apples just before mixing and immediately add lemon juice and oil to prevent discoloration of apples.

Mooli Lachha Salad (Radish Relish) Recipe

Mooli lachha is a very simple and easy recipe but it can jazz up your meals. Since mooli or radish comes in winter, this is the time to prepare this relish.
Recipe of mooli lachha/ radish relish/ moolikas
2 mooli (radish/ diakon)
1 inch piece ginger
2 green chillies- chopped
Salt to taste
Juice of 1 lemon or 2 tsp
1. Peel and remove top and end of mooli. Wash and grate.
2. Peel, wash and grate ginger.
3. In a bowl, mix all the ingredients. Serve mooli ka lachha or moolikas along with meals.

Mixed Fruit Salad Recipe

After all this frying, I wanted to make something really healthy. What’s better than mixed fruit salad or chaat. You can add or remove any number of fruits according to season and availability. Fruit salad is something you can never go wrong with.
Recipe of mixed fruit salad/ chaat
1 apple- cubed
1 guava (amrood) - cubed
1 medium sized potato- boiled, peeled and cubed
1 small cucumber- peeled and chopped
1 pear- chopped
1 orange- peeled and segments removed
1/2 cup pomegranate (anar ke dane)
Salt to taste
3/4 tsp black pepper powder
1 tsp chaat masala
Juice of 1 lemon
1. Remove skin and seeds of orange segments.
2. Place all the fruits, cucumber and potato in a bowl.
3. Add rest of the ingredients and toss. Serve mixed fruit salad cold.
