Sweet and Salted Ajwain (Carom Seeds) Cookies

These ajwain cookies are a perfect companion with your evening cup of tea and they are delicious as any
time snack. These biscuits not just sweet and salty but their ajwain taste makes them all the more appealing.
Recipe of ajwain cookies
1 cup maida (all purpose flour)
1/2 tsp salt
1/2 cup sugar
1 tsp ajwain (carom seeds)
1 tsp baking powder
4-5 tbsp butter or ghee (clarified butter)

How to make ajwain (carom seeds) cookies
1. Mix maida, salt and baking powder and pass through a sieve. Add 1/2 tsp ajwain.
2. In a separate bowl, mix butter and sugar. Beat it till it becomes light and fluffy.
3. Mix this butter-sugar mixture to maida to form a soft dough.
4. Pinch small balls from this dough and flatten between your palms.
5. Press upper sides of cookies lightly with a fork and sprinkle rest of the 1/2 tsp ajwain over them.
6. Take a baking tray and spread aluminium foil or cookie sheet over it. Grease it with few drops of oil or butter.
7. Preheat oven at 180 degree C for 10 minutes.
8. Place uncooked cookies on baking tray, a few distance apart.
9. Place the baking tray in oven and bake at 180 degree C for 15-20 minutes. The upper and lower side of
biscuits or cookies will look brownish. Take the tray out of oven.
10. Let the cookies cool for about 10 minutes before removing from the tray. Enjoy your ajwain cookies!

Green Pea (Matar) Patties

Green pea patties or hare matar ki patty is a good and healthy breakfast option. I'm sure your kids will like it too.
Recipe of green pea patties
1 cup green peas (hare matar) - shelled
2 green chillies- chopped
1/2 cup paneer (Indian cottage cheese) - grated
1/4 tsp roasted cumin (jeera) powder
Salt to taste
2 tsp tomato ketchup
8 slices of bread- buttered lightly
1 tbsp oil
How to make green pea patties
1. Heat oil in a pan and saute green chillies till light brown.
2. Add peas, salt and cumin powder. Mix and cook covered till done. You can also add little water while cooking. Turn off the heat.
3. Mash the peas roughly.
4. Add tomato ketchup and grated paneer and mix well.
5. Spread pea mixture on buttered side of 4 bread slices.
6. Cover with buttered side of remaining slices. Press.
7. Grill on a wire rack of hot oven or toast in a sandwich maker. Cut into triangles and serve green pea patties hot.

Bharwa Shimla Mirch (Potato Stuffed Bell Pepper)

I make bharwa shimla mirch both in an oven and a pan. Below, I have given recipes of both pan made stuffed capsicum and oven made stuffed bell pepper. They taste great any way you make them. I have taken green capsicums but if you take red and yellow bell peppers also, the dish will look very colorful indeed.
Recipe of potato stuffed baked shimla mirch
4-5 shimla mirch (capsicum/bell pepper)
3 medium potatoes- boiled, peeled and mashed
1 onion- chopped
Salt to taste
1/2 tsp red chilli powder
1/2 tsp cumin powder
1/2 tsp amchoor (dried mango powder)
1/4 tsp garam masala
Oil to grease and spray or a blob of butter
1. Mix all the above ingredients except shimla mirch and oil. Remove stalk and seeds of shimla mirch. Cut them into 4 quarters.
2. Stuff the potato mixture in these quarters.
3. Grease a baking tray and place bharwa shimla mirch on it. Spray oil or you can spoon some melted butter on them.
4. Bake them for about 30minutes at 250 degree C.  Keep checking in between so that they don’t burn. Serve hot baked potato stuffed bell pepper.
Or
You can also make them in a pan. For this remove stalks and seeds of shimla mirch and discard them. Heat 2 tsp oil in a non- stick pan and sauté onion. Add potato and rest of the spices and salt including 1/4 tsp turmeric powder. Roast the mashed potatoes. Take the potato mixture out of the pan and let it cool. Stuff this mixture into capsicum. Heat 1 tbsp oil in the same pan and place bharwa shimla mirch. Lower heat and cover the lid. Cook till shimla mirch are tender and brownish at places. While cooking rearrange the positions of shimla mirch in between so that capsicums are roasted from all sides.

Eggless Apple Cake Recipe

This is a very simple recipe of very delicious apple cake. Who says you can't bake cakes without eggs. I bake all my cakes without egg and all turn out very tasty and soft. Try this apple cake and you'll agree with me.
Recipe of eggless apple cake
1 cup whole wheat flour (atta)
1 cup all purpose flour (maida/refined flour)
1 cup powdered sugar
1 1/2 cups apple puree (unsweetened)
1 cup milk
1 tsp baking powder
1/2 tsp soda-bi-carbonate
100 gms melted butter
1. Preheat the oven to 200 degree C.
2. Grease a cake tin of 1 kg capacity and dust with maida. Keep aside.
3. Sieve together atta, maida, baking powder, soda-bi-carb and powdered sugar.
4. Mix together apple puree and milk. Blend till well blended.
5. Add butter and mix.
6. Slowly add the flour mixture, mixing with other hand to prevent lump formation.
7. If the cake batter appears too thick, add a little milk.
8. Pour the cake batter in the cake tin and bake in the preheated oven at 200 degree C. Bake for 30-40 minutes. Insert a toothpick or a knife at the center of the cake. If it comes out clean, your cake is done.
9. When the apple cake has cooled down, invert onto a plate and cut as desired.

Homemade Pizza

Everyone in my family prefers homemade pizza over readymade pizza. Not only it’s economical but far healthier and you can control how much cheese or butter goes in it. It doesn’t take much long to prepare pizza at home if you have ingredients at hand.
Recipe of homemade pizza
Makes 2 pizzas
2 ready made pizza bases

Tomato sauce
1/2 cup tomato puree
4 garlic flakes- chopped finely
3 tomatoes- chopped finely
1 tsp oil
1 tsp dried oregano
Salt to taste
Ground black pepper- to taste

Topping
1 onion- chopped
1 tomato- pulp removed and chopped
1 capsicum (bell pepper) - deseeded and chopped
A few slices of jalapenos
200 gms mozzarella cheese (pizza cheese) - grated
1-2 tbsp olive oil
1. To prepare the tomato sauce, heat oil in a pan and add garlic. Stir for a few seconds and add all the ingredients for sauce. Bring it to a boil. Lower heat and cook for about 8 minutes, stirring occasionally. Cook till sauce thickens and can be spread without being runny. Turn off the heat.
2. Spread olive oil or melted butter over each pizza base covering the edges.
3. Spread tomato sauce over pizza base.
4. Sprinkle some grated cheese over each base.
5. Sprinkle the vegetable topping.
6. Sprinkle left over cheese. Drizzle some olive oil.
7. Bake at 180 degree C OR 350 Degree F for 15 minutes or until golden and crisp. Serve pizza hot.
Note- You can also use readymade pizza sauce instead of making it at home to make pizza absolutely fast.

Baked Potato Wedges

The first time I made these baked potato wedges, I was surprised how easy they are to put together and how deliciously crunchy they are. If you love potato, then this dish is a must try and what my strong belief is that it can turn even a non-believer into a fan.
Recipe of baked potato wedges
4-5 medium potatoes- washed and cut into wedges
3 tbsp olive oil
4-5 garlic cloves- crushed
1 tsp salt or to taste
1/2 tsp red chilli flakes
1 tsp mixed herbs like dried parsley, dried basil, and rosemary
1 1/2 tbsp lemon juice
1. Preheat oven to 375 degree F.
2. Mix all the ingredients in a bowl and add potato wedges to it. Toss so that potatoes are well coated with the seasoning.
3. Spread potato wedges on a greased baking tray. Bake at 375 degrees F for about 35-40 minutes. Serve hot.
Note- for quick results, boil potatoes to 2 whistles and then cut into wedges.

Nan Khatai (No Egg Indian Biscuit)

Nan khatai is a traditional Indian and Pakistani no egg biscuit or cookie. Nan khatai were the first biscuit I ever tried. When I first tried them, they looked like chocolate biscuits due to over heating of oven. I got the exact formula after trying 2-3 times. These nan khatai vanish within no time. They just melt in the mouth.
Recipe of nan khatai/ biscuits
1 cup maida (all purpose flour/ refined flour)
1/2 cup powdered sugar
1 tsp baking powder
4-5 tablespoons ghee (clarified butter)
½ tsp cardamom (elaichi) powder
1. In this season ghee remains in a semi- melted state. I took it as it is. In a bowl mix ghee and powdered sugar. Beat it well till it becomes lighter in color and fluffy.
2. Sieve together maida and baking powder and mix cardamom powder. Add ghee-sugar mixture to maida. Knead it into soft dough. Let it rest for a while. Preheat the oven at 180 degrees for 10 minutes
3. Line a baking tray with cookie sheet. (I used aluminium foil as cookie sheet was not available and greased it with few drops of ghee).
4. Make small round balls from the dough and flatten them between your palms. Place these on a baking tray keeping a distance between them.
5. Bake at 180 degrees for 15-16 minutes or till they turn slightly brownish both from the bottom and upper side. Let them cool completely before digging your teeth in these scrumptious nankhatai.

Simple Eggless Vanilla Cake Recipe

Simple eggless vanilla cake is also called basic eggless cake. This is a very simple and easy to follow recipe which uses no eggs or butter.
Recipe of simple eggless vanilla cake/ basic eggless cake
1 1/2 cup all purpose flour (maida/refined flour)
1 cup sugar
2 tsp vanilla essence
1 cup milk
1 tsp baking powder
3 tbsp oil
1. Mix all purpose flour and baking powder and pass them through a sieve.
2. Add rest of the ingredients and mix well. Beat the cake batter thoroughly.
3. Preheat oven at 200 degree C for 10 minutes.
4. Grease a baking pan with few drops of oil and dust with all purpose flour. Pour the cake batter in the pan.
5. Bake this vanilla cake in preheated oven at 200 degree C for 10 minutes. Reduce the temperature of the oven to 180 degree C and bake for 20-25 minutes or till a toothpick inserted at the centre of the cake comes out clean.
6. Cool the cake in the baking pan for 20 minutes, then invert onto a plate. Cut this eggless vanilla cake into slices when it cools down completely.

Naan (Leavened Indian Flatbread)

Naan is one of the popular breads of India which is also known abroad. Naan is more popular in Northern states of India where it is on the menu of most hotels and restaurants.
Recipe of naan bread
4 cups all purpose flour (maida)
1 tsp salt
1 tbsp sugar
1/2 cup milk
1/2 tsp baking powder
4 tbsp oil
Nigella seeds (kalaunji) - 1 tsp
1. Take a bowl and place all purpose flour, salt and baking powder in it. Make a well in the center.
2. In another bowl, mix milk, sugar and 2 tbsp oil. Pour this mixture in the center of the flour.
3. Knead this flour into soft dough adding warm water if necessary.
4. Add remaining 2 tbsp oil and knead again. Cover with a damp cloth and set aside for 15 minutes. Knead again.
5. Keep it in a warm place for 2-3 hours.
6. Divide the dough into 8 equal balls. Roll out each ball on a floured surface in thin oval shape. You can dust them in flour while rolling out if they are sticking.
7. Sprinkle nigella seeds in each and press lightly with rolling pin (belan).
8. Bake naan in a preheated oven till they puff up and become golden brown. You can also butter them to have butter naan. We enjoy them with dal makhani and shahi paneer.
Alternatively you can also cook naan in an electrtic tandoor or gas tandoor if own one.

Paneer Tikka (Grilled Marinated Cottage Cheese)

Paneer Tikka is a fancy food which many people think can be made only at restaurants and hotels. Believe me with this simple recipe you can make delectable paneer tikka at home and surprise everyone.
Soft pieces of paneer marinated in spiced yogurt and grilled to perfection make it a protein packed low calorie tasty food.
Recipe of Paneer Tikka

250 grams paneer (Indian cottage cheese)
1 medium green capsicum (bell pepper)
1 medium onion
1 medium tomato
1 cup thick yogurt (curd/ dahi)
¼ tsp turmeric powder
1 tbsp tandoori masala
1 tsp chaat masala
2 tsp ginger- garlic paste
2 green chillies- crushed
Salt to taste
1 tbsp oil

  1. Cut paneer, onion, tomato and capsicum into 1&1/2 inch pieces.
  2. Mix yogurt, turmeric powder, tandoori masala, chaat masala, ginger- garlic paste, green chillies, salt and oil to a smooth paste.
  3. Add paneer cubes to this marinade. See that paneer is well coated with it. Keep in refrigerator for 2 hours.
  4. Soak a few bamboo skewers in water for 20 minutes. Take out, pat dry and grease them with few drops of oil.
  5. Put onion, tomato and capsicum pieces in the marinade and coat them well. Thread pieces of marinated paneer and veggies one after the other on the skewers.
  6. Cook on an oiled grill turning the skewers a few times. Or you can set your oven to Broil. Preheat your oven broiler to high. Broil till you see brown- black spots on the paneer and vegetables and paneer is slightly charred on the edges. Or you can also cook on Barbecue. Or you can also make paneer tikka in an electric or gas tandoor if you have one.

 While cooking paneer tikka just don’t go anywhere and keep an eye on it so that they don’t get burned. Also don’t over cook it.

Tomato Corn Bruschetta

Tomato corn bruschetta is a delicious appetizer which can be made pretty easily. You can skip the sweet corn or American corn and make ‘Tomato Bruschetta’ using tomatoes only. You’ll love it any way you try.
Recipe of tomato corn bruschetta
1 French bread- cut into 1/2 inch thick slices (about 12 slices)
2 tsp garlic paste
1 tbsp butter
1 tbsp olive oil
Salt and pepper to taste

Topping
2 cups tomatoes- deseeded and finely diced
1/2 cup sweet corn- boiled
1/2 tsp coarsely crushed black peppercorns
1 tsp oregano
Salt to taste
Red chilli flakes to taste
1 tbsp olive oil
1. In a bowl, mix garlic paste, salt, pepper, butter and olive oil.
2. Apply a thin layer of this paste on each slice of French bread. Heat a griddle (tava) and lightly toast these slices on it. Set aside.
3. Now for the topping, heat olive oil in a pan and add tomatoes. Stir fry for few seconds.
4. Add sweet corn, oregano, salt, red chilli flakes and crushed peppercorns. Sauté for 2 minutes.
5. Spread 2 tsp topping on each slice of toasted bread. Preheat oven at 180 C for 10 minutes.
6. Bake these bread slices in preheated oven at 180 degree C for 5 minutes or till crisp. Serve tomato corn bruschetta hot.

Brown Bread Pizza

This brown bread pizza is loved by kids. I usually prepare them for breakfast but it can also be had as an anytime snack. Brown bread is used so as to incorporate fibers but bread pizza can also be made using regular white bread.
Recipe of brown bread pizza
6-8 brown bread slices
1 Capsicum- deseeded and finely chopped
1 tomato- pulp removed and finely chopped
1 onion- finely chopped
1 tbsp corn kernels
3/4 cup cheddar or mozzarella cheese- grated
1/4 tsp chilli flakes
1/2 tsp salt
1/2 tsp oregano
Butter- as needed
1. Mix half of the grated cheese and rest of the ingredients except bread in a bowl.
2. Apply a thin layer of butter on one side of bread slices. Place this mixture over them. Sprinkle rest of the cheese on top of all bread slices.
3. Bake these bread slices at 250 degree C for 3-5 minutes or till the cheese melts and turn golden brown. Serve bread pizza hot.

Baked Atta Mathri (Whole Wheat Savory Crackers)

Today I woke up at 4:00 in the morning bitten by baking bug. For the past few days, I had been thinking of baking mathri instead of deep frying. Today I woke up fresh and tried my hands at baking mathri. To my surprise, they turned out delicious. I used whole wheat flour (atta) instead of all purpose flour (maida) to make them even healthier but you can use maida as per your choice. Here is how I went.
1 cup atta (whole wheat flour)
1/2 tsp ajwain (carom seeds)
1/2 tsp salt
1 tbsp curd (yogurt/ dahi)
2 tbsp ghee (clarified butter)
1/4 tsp baking powder
Cold water for kneading
1. In a bowl, mix atta, salt, ajwain and baking powder. Add ghee and rub between your fingers so that atta gets coated with ghee.
2. Add curd and slowly add cold water just enough to knead the atta into stiff dough. Keep aside, covered, for 15 minutes.
3. Preheat oven at 180 degrees C.
4. Take ball out of the dough and roll out into a big round. Prick them here and there with a fork. With the help of a cookie cutter or anything like this (I used lid of a bottle), cut small rounds from the big one. Repeat for rest of the dough.
5. Grease a baking tray and place these rounds on it. Bake them at 180 degree C for 20-25 minutes or till they turn golden brown.
6. Cool these baked atta mathri (I call them gold coins) completely before storing them in an airtight jar.

Stuffed Tomato Recipe (Bharwa Tamatar)

Yesterday I cooked stuffed tomato or bharwa tamatar for dinner. I used paneer for stuffing tomato but you can also use paneer with boiled and mashed potato for this recipe. Stuffed tomato is a very delicious side with rotis. Try it to believe it. What’s more, it can be made quickly if you are entertaining some guests.
Recipe of stuffed tomato
5-6 medium tomatoes (tamatar)
100 gms paneer (cottage cheese) - crumbled
1 inch piece ginger- grated
1 onion- chopped
Salt to taste
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1 tsp kasoori methi (dry fenugreek leaves)
2+2 tsp oil
Chopped coriander leaves
hollowed tomatoes

1. Wash tomatoes and pat dry. Remove top of the tomato like a cap and keep aside.
2. Scoop out pulp of the tamatar and chop the edible portion of the caps. Set aside.
3. Heat 2 tsp oil in a pan and add cumin seeds. When they change color, add onion and ginger. Sauté till light brown.
4. Add pulp and chopped caps of tomato. Add salt, red chilli powder and garam masala. Cook till pulp turns dry.
5. Add paneer and kasoori methi. Cook, mixing, for 1 minute. Remove from fire and let the paneer masala cool.
6. Preheat oven at 180 degree C. Stuff this paneer mixture inside the hollow tomato. Arrange the stuffed tomato on a greased baking tray.
7. Pour 2 tsp oil mixed with 1/4 tsp salt on all the tomatoes. Bake at 180 degree C for 30-35 minutes or till tomato turn soft. Take out stuffed tomato in a serving bowl and garnish with coriander leaves.

Stuffed tomato in Microwave

Place stuffed tomato in a microsafe bowl and cover with a microsafe lid or a cling film with holes pierced. Before covering, Pour 2 tsp oil mixed with 1/4 tsp salt over the bharwan tamatar. Cook on a High for 5 minutes or till tomato turn soft.

Coconut Cookies

These coconut cookies are mine and my hubby’s favorite cookies. They are absolutely delicious and melt in the mouth. I baked coconut cookies yesterday and only few of them are left today.
Recipe of coconut cookies/ biscuits
1 1/2 cup maida (all purpose flour/refined flour)
1 cup desiccated coconut
3/4 cup grinded sugar
4-5 tbsp unsalted butter or ghee (clarified butter)
3/4 tsp baking powder
1. Mix sugar in butter or ghee. Beat it till it gets lighter in color and fluffy.
2. Mix coconut and baking soda in all purpose flour.
3. Mix flour mixture in sugar-butter mixture. Turn it into dough. The dough would be crumbly.
4. Preheat oven to 180 degree C for 10 minutes.
5. Make small balls from the dough and flatten them between your palms. Line a baking tray with cookie sheet and grease it. Place these raw cookies on baking tray with some distance apart.
6. Bake them in the oven at 180 degree C for approx. 15 minutes or till they turn light brownish from the base. When hot, they will be soft to touch. Cool the coconut cookies completely before storing them in an airtight jar.

Atta Biscuits (Whole Wheat Cookies)

I wanted to bake some really healthy, less sweet cookies. So I ended up baking these atta biscuits or whole wheat cookies. They are healthy since whole wheat flour and vegetable oil are used instead of refined flour and butter. These atta biscuits are not very sweet and soft to eat and not crunchy.
Recipe of atta biscuits/ whole wheat cookies
1 cup atta (whole wheat flour)
5 tbsp vegetable oil
1/2 cup powdered sugar
1/2 tsp cardamom powder
1 tsp baking powder
1. Mix oil and sugar in a bowl. Beat really well till it turns light and fluffy.
2. Sieve together atta and baking powder. Mix in cardamom powder.
3. Mix this in the oil-sugar mixture. Knead into soft dough. If the dough is difficult to knead, add some chilled milk. Keep it aside for a while.
3. Preheat oven to 180 degree C.
4. Form small balls from the dough and flatten them between your palms. Line a baking tray with cookie sheet and lightly grease it.
5. Place biscuits on the tray keeping a little distance between them. Bake them at 180 degree C for 10-12 minutes. Let the atta biscuits cool completely before sampling them. Store in an airtight container.

Chilli Cheese Toast

Chilli cheese toast is a very simple and fast recipe. If you have the ingredients at home, you can prepare these toasts quickly. Chilli cheese toast is quite tasty and hassle free breakfast and snack item.
Recipe of chilli cheese toast
1 capsicum (bell pepper/shimla mirch) - finely chopped
2 green chillies- finely chopped
1 onion- finely chopped
1/2 cup grated cheese (mozzarella or cheddar)
Salt to taste
1/4 tsp black pepper powder
Chopped coriander leaves (cilantro)
Few slices of bread (I used brown bread)
1. Mix half of grated cheese and rest of the ingredients except bread, in a bowl.
2. Take bread slices and spread this mixture on 1 side of the bread. Sprinkle rest of the cheese over them.
3. Bake these slices in an oven at 250 degree C till cheese melts and turn golden. Serve chilli cheese toast hot.

Eggless Banana Cake/Bread

Banana cake is also called banana bread but I prefer to call it a cake because it is as soft and delicious as a cake. I love banana and also cake so this eggless banana cake is a perfect combo for me. This is also a low calorie cake since I have used less butter than generally used but trust me, it has no effect on the taste.
Recipe of eggless banana cake/bread
2 cups maida (all purpose flour/refined flour)
1 cup sugar
2 pinches salt
1 tsp baking powder
2 over ripe banana (kela)
2 tbsp butter
1/2 cup milk

 1. Peel and mash banana till smooth and lump free.
2. Sieve together maida, salt and baking powder.
3. Add sugar and butter to mashed banana and mix well till smooth.
4. Preheat oven at 180 degree C for 10 minutes.
5. Add maida from step 2 to banana mixture. Add milk. Beat well (I used hand blender) the batter.
6. Grease a baking pan and dust it with maida. Shake off excess maida.
7. Pour the cake batter in the baking pan and place it in the oven.
8. Bake the banana cake at 180 degree C for 30 minutes or till a knife inserted at the centre of the cake comes out clean.
9. If the upper surface of the cake has not browned, bake at 250 degree C for 5 minutes. This should brown the cake.
10. Take out from the oven and cool for about 20 minutes. Then invert from the baking pan on to a plate. Upon cooling down completely, slice and serve the banana cake.

Bharwan Aloo (Baked Stuffed Potato Recipe)

Bharwan aloo or stuffed potato is a very delicious side with rotis or you can even have them as a snack. My hubby is a potato lover and he absolutely adores this dish. You can also serve stuffed potato to your guests. I am sure they will praise your cooking.
Recipe of bharwan aloo/ stuffed potato
4-5 medium aloo (potatoes)
100 gms paneer (cottage cheese) - crumbled
1 onion- chopped
1 inch piece ginger- grated
1 tomato- chopped
1/2 tsp red chilli powder
Salt to taste
1/2 tsp cumin seeds
2+2 tsp oil
1/2 tsp garam masala
1. Boil aloo to 2 whistles. Peel and cut lengthwise into 2 pieces.
2. With the help of a scoop, scoop out the inner portion of the potato halves keeping the walls intact. Keep the scooped out portion of aloo.
3. Heat 2 tsp oil in a pan and add cumin seeds. When they change color, add onion and ginger. Sauté till light brown. Add tomato and cook till it turns mushy.
4. Add scooped out aloo. Add salt, red chilli powder and garam masala.
5. Add paneer and cook mixing everything well for 1 minute. Remove from heat and let the aloo paneer mixture cool down.
6. Grease a baking tray with few drops of oil.
7. Stuff the above mixture in hollowed out potato halves. Arrange stuffed potato on the baking tray. Drizzle 2 tsp oil over them.
8. Bake aloo at 250 degree C till they turn brownish or till they look done. Serve stuffed potato hot.

Spinach Cheese Toast

Spinach cheese toast

Spinach cheese toast is not just delicious but also very nutritious. It’s a way to make your child eat spinach which is also called ‘Popeye Food’. In fact this toast is a good way to start your day.
Recipe of spinach cheese toast
1 & 1/2 cup finely chopped spinach (palak) leaves (stems discarded)
4 bread slices (I used brown bread)
2 tsp butter
Salt to taste
40-50 gms cheese- grated
Red chilli flakes- as needed
1 small onion- chopped
1. Heat butter in a pan and add onion. Sauté till transparent.
2. Add spinach and salt and sauté for 2-3 minutes. Turn off the heat.
3. Take bread slices and spread spinach mixture on them.
4. Sprinkle grated cheese on top of each slice. Sprinkle chilli flakes on them.
5. Grill at 250 degree C in the oven till cheese melts. Take out and cut into triangles. Serve spinach cheese toast hot.
