Easy Potato Sandwich

This is an easy breezy recipe of toasted potato sandwich. This is an instant recipe when you are in a hurry but tell you what, this potato sandwich tastes yummm!!
Recipe of potato (aloo) sandwich
2-3 potatoes (aloo) - boiled, peeled
1/2 tsp black pepper powder
Salt to taste
Butter as needed
Bread slices (I used brown bread)
1. Break the potatoes into uneven pieces by your hands.
2. Mix salt and pepper powder in potato pieces.
3. Apply butter on bread slices. Place potato mixture on bread slice and cover it with another slice.
4. Toast in a sandwich maker and serve potato sandwich hot with tomato ketchup.

Green Pea (Matar) Patties

Green pea patties or hare matar ki patty is a good and healthy breakfast option. I'm sure your kids will like it too.
Recipe of green pea patties
1 cup green peas (hare matar) - shelled
2 green chillies- chopped
1/2 cup paneer (Indian cottage cheese) - grated
1/4 tsp roasted cumin (jeera) powder
Salt to taste
2 tsp tomato ketchup
8 slices of bread- buttered lightly
1 tbsp oil
How to make green pea patties
1. Heat oil in a pan and saute green chillies till light brown.
2. Add peas, salt and cumin powder. Mix and cook covered till done. You can also add little water while cooking. Turn off the heat.
3. Mash the peas roughly.
4. Add tomato ketchup and grated paneer and mix well.
5. Spread pea mixture on buttered side of 4 bread slices.
6. Cover with buttered side of remaining slices. Press.
7. Grill on a wire rack of hot oven or toast in a sandwich maker. Cut into triangles and serve green pea patties hot.

Besan Masala Toast

You can have this besan masala toast as a healthy breakfast option or as a low calorie snack.
Recipe of besan masala toast
1/2 cup besan (chickpea flour/gram flour)
1 onion- chopped
1 tomato- chopped
2-3 green chillies- chopped
Fresh coriander leaves (cilantro) - chopped
Bread slices as needed (I used brown bread)
Salt to taste
Oil as needed
How to make besan masala toast
1. Take besan in a bowl and add water little by little, mixing with other hand so as to prepare a smooth lump free batter. The consistency of batter should be pakora (fritter) batter like.
2. Add rest of the above ingredients (except bread and oil) to the besan batter and mix well.
3. Heat a non-stick tava (griddle). Apply a thin layer of besan mixture on 1 side of bread slices.
4. Keeping the heat to low, smear oil on tava and place bread slices on tava with besan mixture side down. Roast on a low heat for 2-3 minutes, and then increase the heat to medium. Roast for 1-2 minutes.
5. Flip and roast other side of bread as well.
6. Remove from tava and serve besan masala toast hot with tomato ketchup.
Note- 1. Apply a thin layer of besan mixture otherwise it will remain uncooked.
2. Roast besan toast on a low heat otherwise vegetables will burn.
3. You can apply besan mixture on both sides of bread also.

Sooji (Semolina) Toast Recipe

This is a low calorie, healthy and tasty breakfast option. I learnt this recipe of sooji toast from my maternal aunt Mrs. Deepa Gupta while we were casually chatting. She also adds capsicum (shimla mirch) and cabbage (patta gobi) to the sooji -curd mixture.
Recipe of sooji toast
1/2 cup sooji (semolina/suji)
1 cup curd (yogurt/dahi)
1 onion- chopped
1 tomato- chopped
3 green chillies- chopped
Salt to taste
Oil as needed
6-8 bread slices (I used brown bread)
How to make/prepare suji toast
1. Soak suji in curd for 15 minutes.
2. Add salt, onion, tomato and green chillies to it.
3. Apply a thin layer of sooji mixture on one side of bread slices.
4. Heat a non-stick tava (griddle) and smear oil on it. Place bread slices on tava with mixture side down. Keep the heat to low otherwise vegetables will burn.
5. While the lower side of bread is roasting, apply a layer of suji mixture on upper side as well.
6. After 2-3 minutes of roasting, increase the heat to medium and roast for 1-2 minutes more.
7. Flip and roast other side of bread as well. Remove from tava and serve sooji toast hot.
Note- 1. Apply a thin layer of sooji mixture otherwise it will remain uncooked and give raw taste.
2. Also, cook sooji toast on a low heat otherwise topping will burn.
3. You can also prepare suji toast by applying suji mixture on 1 side of bread only but you have to roast plain bread side also.

Sprouts Sandwich

Sprouts sandwich is a yummy way to eat sprouts. This way you can even make kids eat them. It’s rainy season here at home so it’s easy to grow sprouts hence these sprouts sandwich.
Recipe of sprouts sandwich
1 cup sprouts (sprouted dal like moong or moth)
1 onion- chopped
3 green chillies- chopped
2 potatoes- boiled, peeled and mashed
Salt to taste
Black pepper powder- to taste
Bread slices (I used brown bread)
Butter- as required
sprouts masala for sandwich

1. Pressure cook sprouts to 2 whistles with 1 tbsp water and salt.
2. In a bowl, mix sprouts, onion, green chillies and mashed potato. Add salt and black pepper powder.
3. Lightly butter bread slices on 1 side.
4. Take a buttered bread slice and place sprouts mixture on it. Cover it with another slice with buttered side down.
5. Place this in a sandwich toaster or grill them. Similarly make rest of the sprouts sandwich from remaining material.

Cucumber Onion Tomato Sandwich

These sandwiches are great for breakfast anytime! Cucumber tastes good in a sandwich and tomato, onion impart a lot of flavor plus nutrition. I have used butter as a spread but you can also use mayonnaise in its place.
Recipe of cucumber onion tomato sandwich
6 bread slices (I used brown bread)
1 cucumber- peeled and sliced
1 tomato- sliced
1 onion- sliced
Butter- as required
Salt to taste
Black pepper powder- to taste

1. With the help of a sharp knife, thinly remove sides of the bread slices. (You can dry them and make bread crumbs from them).
2. Apply a thin layer of butter on 1 side of bread slices.
3. Arrange cucumber, onion and tomato slices on buttered side of 1 bread slice.
4. Sprinkle salt and pepper on them.
5. Cover the sandwich with another bread slice (buttered side down).
6. Enjoy cucumber, onion and tomato sandwich!

Diet (Low Calorie) Bread Pakora

This low calorie bread pakora is my neighbor’s recipe who used to be my walking buddy. Since her husband has heart ailment, she refrained from giving him anything deep fried. So, she found out an innovative idea of satisfying his cravings for pakora. I tried it out myself and liked it.
Recipe of diet (low calorie) bread pakora
Makes 6 bread pakoras
3 bread slices
1/2 cup besan (chickpea flour/ gram flour)
Salt to taste
1/2 tsp red chilli powder
Oil to shallow fry
1. Take besan in a bowl and mix salt and red chilli powder in it.
2. Add water little by little, mixing with other hand to get pakora batter like consistency.
3. Spread the besan batter on 1 side of bread slices using a spoon. Heat a non-stick tava (griddle) and smear it with oil. Place bread slices on it with the batter side down. Turn the heat to medium.
4. While the lower side is cooking, spread the batter on upper side also.
5. When the lower side is done, turn over and cook from other side also. Cook till golden brown. Cut the bread slices into triangular halves. Serve hot with tomato sauce.

Paneer (Cottage Cheese) Sandwich

This toasted paneer sandwich is so easy to make that anyone can make it. It’s delicious and ready to eat in few minutes. Paneer sandwich makes for a quick breakfast and anytime snack. It contains both proteins and carbohydrates.
Recipe of paneer sandwich
200 grams paneer (cottage cheese) - crumbled
1 onion- chopped
1/2 tsp black pepper powder
Salt to taste
Butter as needed
Bread slices
1. Mix paneer, salt, onion and black pepper powder. 
2. Take a slice of bread and place the paneer mixture on it. Cover it with another lightly buttered slice. You can make this sandwich either in an electrical sandwich toaster or gas top sandwich maker. Similarly make other sandwiches. Enjoy paneer sandwich hot with tomato sauce.

Open Potato Toast

Open potato toast soon becomes everybody's favorite including kids. These toasts are so delicious that I can eat them one after the other. I learnt this recipe from my hubby Rahul who used to make them during his hostel days. By the way, he is an excellent cook who loves to experiment with various ingredients.
Recipe of Open potato toast
4 slices of bread
2 medium potatoes- boiled, peeled and mashed
1 onion- chopped
2 green chillies- chopped
Salt to taste
Coriander leaves (cilantro) - chopped
Butter to toast the bread
1. Mix all the above ingredients except bread and butter. Mix well.
2. Spread potato mixture on one side of bread slices, pressing gently so that potato mixture sticks to the bread. You have to do it gently because you don't want the bread to break.
3. Heat a non- stick tawa (griddle) and melt some butter on it. With the help of a spatula,
smear the tawa with the butter. Put bread slices on it, potato side down. Toast till potato becomes reddish brown, pressing it with the spatula.  Flip and toast the other side of bread also. Remember it takes much longer to toast the potato side than plain bread side. Also toast on medium heat. Serve hot open potato toast with tomato sauce.

Dahi (curd) sandwich


Use fresh curd for dahi sandwich or curd sandwich. Stale or sour curd taste awful. The thick dahi you get after removing excess liquid gives a creamy feeling in the sandwich.

             Recipe of dahi sandwich/ curd sandwich
            Serves 3

            6 bread slices
            1 1/2 cup dahi (curd)
            1 small onion- finely chopped
            1 small tomato- finely chopped
            1/2 tsp black pepper powder
            1/2 tsp bhuna jeera (dry roasted cumin seeds)
            Salt to taste
            Butter to toast the bread

1. Hang curd in a muslin cloth for 10 minutes or you can put it in a strainer with a bowl below. This way you get thick curd.

2. Mix dahi, tomato, onion, pepper powder, salt and roasted cumin seeds.

3. Put dahi mixture on 1 slice of bread and cover with another slice.

4. Heat a non- stick tawa (griddle) and toast the dahi sandwich in butter on both sides till golden. Serve curd sandwich hot.

Moong dal toast

moong dal toast

Moong dal toast is an easy to make, tasty breakfast. It’s also a bit different from your routine breakfasts. When making moong toast, apply a thin layer of dal paste on bread slices.
Recipe of moong dal toast
            6 slices bread
            1 cup dhuli moong dal (split, skinless green gram)
            3 green chilies
            1 tbsp besan (gram flour)
            1 tsp lemon juice
            Salt to taste
            Coriander leaves- finely chopped
            Oil or butter to toast the bread

1. Soak moong dal for 1 1/2 hours. Drain and grind with green chilies to a fine paste.

2. Mix together dal paste, besan, salt, lemon juice and coriander leaves.

3. With the help of a spoon, spread dal mixture on one side of a bread slice.

4. Heat some oil or butter on a non-stick tawa (griddle) or a pan. Place the bread on the hot tawa with the dal side down.

5. Spread dal mixture on the upper side of the bread too while the bread is getting toasted on the lower side. Toast the bread on other side also.

6. Cut into triangles and serve hot moong dal toast with tomato sauce.

Toasted Aloo (Potato) Sandwich

Toasted aloo sandwich is a delicious and easy breakfast option as well as any time snack. They are also a good option for Tiffin. They are also liked by kids.
Recipe of aloo sandwich
3 boiled (aloo) potatoes- peeled and mashed
Salt to taste
2 green chillies- chopped
1 onion- chopped
1/4 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp amchoor (dried mango powder)
A pinch of hing (asafoetida)
1/4 tsp mustard seeds
1/4 tsp garam masala powder
1 tbsp oil
5-6 curry leaves (optional)
Chopped coriander leaves
Bread slices
aloo masala

1. Heat oil in a pan (wok) and add cumin seeds and mustard seeds. When they splutter, add hing.
2. Add onion, curry leaves and green chillies and sauté till onion become transparent.
3. Add potato. Add turmeric powder and salt. Roast the potatoes. While roasting, keep removing the scrapings from the pan. Add garam masala, amchoor and coriander leaves and mix well.
4. Take a bread slice and place just enough potato mixture so as to cover the bread. Place another slice over it. Make aloo sandwich either in an electrical or gas top sandwich toaster. Similarly make other sandwiches.

Brown Bread Pizza

This brown bread pizza is loved by kids. I usually prepare them for breakfast but it can also be had as an anytime snack. Brown bread is used so as to incorporate fibers but bread pizza can also be made using regular white bread.
Recipe of brown bread pizza
6-8 brown bread slices
1 Capsicum- deseeded and finely chopped
1 tomato- pulp removed and finely chopped
1 onion- finely chopped
1 tbsp corn kernels
3/4 cup cheddar or mozzarella cheese- grated
1/4 tsp chilli flakes
1/2 tsp salt
1/2 tsp oregano
Butter- as needed
1. Mix half of the grated cheese and rest of the ingredients except bread in a bowl.
2. Apply a thin layer of butter on one side of bread slices. Place this mixture over them. Sprinkle rest of the cheese on top of all bread slices.
3. Bake these bread slices at 250 degree C for 3-5 minutes or till the cheese melts and turn golden brown. Serve bread pizza hot.

Vegetable Grilled Sandwich Recipe

This recipe makes for tasty vegetable grilled sandwich. I used hand blender chopping jar to finely chop the vegetables and grill plates of sandwich maker to make this grilled sandwich. It's quite simple and makes a satisfying and nutritious breakfast as it contains vegetables.
Recipe of vegetable grilled sandwich
1 onion- chopped finely
1 capsicum (bell pepper) - chopped finely
1 tomato- chopped finely
1 carrot- grated
A pinch of turmeric powder
1/2 tsp red chilli powder
Salt to taste
1 tbsp oil
Few bread slices (I used brown bread)
masala for sandwich

1. Heat oil in a pan and add onion. Sauté onion till it turns translucent.
2. Add capsicum and carrot and stir-fry for 5 minutes.
3. Add tomato, salt, turmeric powder and red chilli powder. Cook till it turns soft. Turn off the heat.
4. Take 1 bread slice and spread some of the above cooked vegetable mixture on it. Cover it with other bread slice and make grilled sandwich or simple sandwich in a sandwich maker. Similarly make other sandwiches from rest of the bread and vegetable mixture.

(Mumbai) Bombay Bread Sandwich

As the name suggests, Bombay bread sandwich is popular in Bombay now called Mumbai. This sandwich is also sold by street vendors in Bombay. It’s a spicy sandwich and healthy one at that. You can skip the butter if you want, it still tastes delicious. I have also tried its toasted version but personally I prefer it untoasted and preferences vary, of course.
Recipe of (Mumbai) Bombay bread sandwich
Serves 2
4 slices of bread
1 boiled potato- cut into roundels
Few slices of onion, tomato and cucumber
Butter- as needed
Green (dhania pudina) chutney- as needed

1. Remove edges of bread slices.
2. Take 1 slice of bread and butter it. Spread green chutney over the butter.
3. Place potato roundels over it. Arrange cucumber, onion and tomato slices on it.
4. Take another bread slice and apply butter on it. Apply chutney over the butter.
5. Now, place this 2nd bread slice above the 1st, chutney side down. Similarly make other sandwich with rest of the slices. Serve Bombay bread sandwich as it is or lightly toast it.

Chilli Cheese Toast

Chilli cheese toast is a very simple and fast recipe. If you have the ingredients at home, you can prepare these toasts quickly. Chilli cheese toast is quite tasty and hassle free breakfast and snack item.
Recipe of chilli cheese toast
1 capsicum (bell pepper/shimla mirch) - finely chopped
2 green chillies- finely chopped
1 onion- finely chopped
1/2 cup grated cheese (mozzarella or cheddar)
Salt to taste
1/4 tsp black pepper powder
Chopped coriander leaves (cilantro)
Few slices of bread (I used brown bread)
1. Mix half of grated cheese and rest of the ingredients except bread, in a bowl.
2. Take bread slices and spread this mixture on 1 side of the bread. Sprinkle rest of the cheese over them.

Spinach Cheese Toast

Spinach cheese toast

Spinach cheese toast is not just delicious but also very nutritious. It’s a way to make your child eat spinach which is also called ‘Popeye Food’. In fact this toast is a good way to start your day.
Recipe of spinach cheese toast
1 & 1/2 cup finely chopped spinach (palak) leaves (stems discarded)
4 bread slices (I used brown bread)
2 tsp butter
Salt to taste
40-50 gms cheese- grated
Red chilli flakes- as needed
1 small onion- chopped
1. Heat butter in a pan and add onion. Sauté till transparent.
2. Add spinach and salt and sauté for 2-3 minutes. Turn off the heat.
3. Take bread slices and spread spinach mixture on them.
4. Sprinkle grated cheese on top of each slice. Sprinkle chilli flakes on them.
5. Grill at 250 degree C in the oven till cheese melts. Take out and cut into triangles. Serve spinach cheese toast hot.
